Dairy free – Fudgey Oreo brownies

Having a dairy allergy is pretty crap. Freddie often misses out on treats on a whim because they contain dairy in some small form or another.

That’s why I like to adapt recipes where I can to make things dairy free for him and ensure he gets a treat once in a while!

Today I have made these gorgeous Oreo stuffed, extra fudgey chocoloate brownies by Marshas Baking Addiction and tweaked them to be dairy free. Marsha’s recipe is super easy and quick!

Here is the tweaked version

  • 140g dairy free spread (we used Vitalite)
  • 300g sugar
  • 75g cocoa powder
  • 60g plain flour
  • 100g dairy free chocolate chips
  • 1/4 tsp salt
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2 packs of Oreos

-Heat the oven to 180c and line a brownie tin wth greased foil.

-Microwave together dairy free spread, sugar, cocoa powder & salt in short bursts until the spread has melted and the batter is warm

-Add in the eggs and flour, then the chocolate chips & vanilla

-Add half the lined batter to the tin along with a layer of Oreos

-Add the rest of the mixture and then a top layer of broken Oreos

-We baked for about 23 minutes until a skewer came clean but with a slight fudgey residue was left.
