It’s my eldest sisters 50th birthday today and so I have done my first bit of baking since Dexter was born.
Here is her Blueberry buttercream triple layer cake with pistachios and white chocolate drip.
It’s actually quite quick to make! I used She who Bakes classic birthday cake recipie as it’s so fool proof. Long and slow cooking of the Madeira is the key.
To the buttercream I added 200g of blueberries which I cooked down into a smooth “jam” with sugar and water. I mashed it a bit to break up the skins.
Then top with the white chocolate drop and pistachios.
