Preserving Sunshine with Santa Rosa Jams

One thing I love when it comes to autumn is the sense of comfort I get from food, especially from preserving and foraging, making things last. This is why I love chutneys, pickles and jams, it’s like keeping the summer all over winter. I have been tryin some jam I have never tried before from Santa Rosa, part of the. Ciao Gusto Italian Deli range at Ocado. Over 30 authentic Italian items that are just perfect for addition to any kitchen.

 

Not just for toast!

To get the most out of food items I like to experiment and think out side the box. Jam and preserves aren’t just for toast in the morning, they are so flavoursome that a little goes a long way. I have made these jam parcels for my boys with the added bonus that they are dairy free for my boys. They are also super simple to make so little hands can make them too. They are super quick and are great as a snack, picnic treat or even on a party Buffet as something simple.

Ingredients 

 A selection of Santa Rosa jams

Supermarket own filo pastry

Told you.. simple!

Method

Cut four sheets of filo into 7x7cm squares, use a super sharp knife though to prevent snagging and tearing the pastry. Add a heaped teaspoon of jam to the middle of each square and a little jam to seal the edges.

Then all you do is twist up into a parcel and add to a preheated oven at 180oc for 15 minutes.

Couldn’t be easier, you can even size up and make it bigger and serve with custard. The jam bomb of flavour makes a lovely accompaniment to the crispness of the pastry.
