Now Freddie is at nursery there is one constant in our day.
He is always hungry.
I cannot fill him up! Even at the weekend he is burning off energy and constantly needing a snackette. We have recently started weaning him back onto dairy and surprisingly this seems to have upped his appetite! The most important thing for me is to get him a filling, tasty plate of scram. And quickly.
Britmums and Rustlers have challenged me to a burger hack using Rustlers Southern Fried Chicken Burger twin packs. These burgers go from microwave to plate in 90 seconds – great for when you need a speedy meal before the next activity or even if you need a quick bite to eat in between juggling the kids meal times.
I have taken part in the Rustlers Burger Hacking Challenge to see what I could hack my burger with to make a balanced, tummy filling meal before we get back to family chaos.
I had Freddie help me choose what he would like on and with his burger. He chose
- Cherry tomatoes
- Baby cucumbers
- Bread sticks
- Roasted red pepper humous.
I brought these along with my weekend shop at Tesco with my voucher for the challenge from Britmums and we set to work!
As the burgers are conveniently cooked in 90 seconds I wanted to make the whole meal super speedy. I decided to pop the cherry tomatoes in the microwave with the pesto until they had started to rupture, around 50 seconds. The pesto in with them gave it the effect of slow roasted garlic tomatoes so this was perfect for the burger topping to add a rich flavour. We added the pesto tomatoes and mayonnaise sachet to the burger.
Then I added a dollop of the red pepper humous, halved the baby cucumbers and added breadsticks and served. The perfect quick meal with lots of protein for his muscle growth and development, veggies for vitamins and minerals and flavour to keep him interested. All served with an easy to hold burger as the Rustlers Southern Fried Chicken Burger twin packs are slightly smaller for little hands at 140g.
Freddie loved the flavours but was mostly flabbergasted that I fed him so quickly with a burger in the microwave. For once I think I fed him before he asked if it was ready. As you can see he was gobsmacked!
I had the same as Freddie with the other burger and they were delicious. The chicken was really tasty and in a southern fried crumb. I loved I could have a quick meal ready to eat in literally seconds but mostly it was great to experiment and get Freddie to help decide what flavours he would like and I think he chose really well as they all fitted together.
